For motor cooling of RC boat, using copper coil may be a better option if water inflow is not always consistent due to shallow water or insufficient speed. Copper itself is a metal that can dissipate some heat even with insufficient water passing through it. And it is less likely leaking water.

There are ready made coils available in standard sizes for 380, 540 and even 775 motor classes.
